Vinification:
The low yield, that assure the typicalness of this wine, requires an hand-crafted production. After the drying, which ends usually around January, the grapes are pressed and the nectar obtained is put through a very long fermentation.
Refinement:
When the fermentation is completed, a perfect balance between alcohol and sugars is reached. At this point the maturation takes place in oak barrels where this wine reaches its maximum expression.
Organoleptic properties:
Rounded, rich and enchanting, this is what our passito is: a wine rich in sugar and with a moderate alcohol content, all underlined by its incredible harmony. Since it gives a different experience each time, it is really difficult to describe a passito. It inebriates everybody with its complex bouquet: vanilla, spices and wild berries.
Our passito pleases and tickles the palate.
